Steps

  • Heat 15ml of olive oil in a frying pan and fry the sea bass skin-side down for 3 minutes.
  • Turn the fish over and cook for 1 additional minute before setting aside.
  • Combine the warm rice with shallots, chilli, and coriander in a bowl.
  • Wilt the spinach in a hot pan with 15ml of water until tender.
  • Drain the spinach and season it with salt and black pepper.
  • Whisk the soy sauce, sesame oil, chopped chilli, and lime juice together for the dressing.
  • Plate the rice first, top with spinach and fish, then drizzle with dressing.
