Method

Preheat the oven to 180°C.

Beat one egg in a bowl and mix with turkey mince, 30g breadcrumbs, and curry paste.

Divide the mixture into four equal portions and roll them into balls.

Beat the second egg and prepare separate plates for the flour and 60g breadcrumbs.

Dredge each ball in flour, dip in beaten egg, and coat thoroughly with breadcrumbs.

Place on a baking tray and bake for 15 to 20 minutes until golden-brown.
