Steps

  • Toast four slices of bread under the grill.
  • Remove the skin from the mackerel and flake the flesh into a bowl.
  • Mix the fish with 60 ml of double cream, 50 g of grated parmesan, and black pepper.
  • Stir in the chopped chives and grated horseradish.
  • Spread the mackerel mixture onto the toasted bread slices.
  • Drizzle with 15 ml of cream and sprinkle with the remaining 10 g of parmesan.
  • Grill the toasts for 3 to 4 minutes until bubbling and golden-brown.
