Steps

  • Grease a small pudding basin with butter.
  • Blitz the flour, sugar, butter, eggs, and sweet potato in a food processor until smooth.
  • Pour the mixture into the basin and cover with cling film.
  • Microwave on high for four minutes.
  • Dissolve the sugar in a pan over low heat until a caramel forms.
  • Add the chopped ginger to the caramel and shake the pan to coat.
  • Turn the pudding onto a dish and drizzle with the ginger syrup.
  • Garnish with orange segments and serve.
