Steps

  • Preheat a small ovenproof frying pan in the oven to 200°C.
  • Cook blueberries and sugar in a small saucepan for 4 minutes.
  • Whisk egg whites in a large bowl until stiff.
  • Whisk egg yolks and sugar in a separate bowl until frothy.
  • Fold the whisked egg whites gently into the yolk mixture.
  • Melt butter and oil in the hot pan and pour in the egg mixture.
  • Add blueberry mixture to the center and bake for 5 minutes until set.
  • Remove from oven and dust with icing sugar to serve.
