Steps

  • Clean the mussels and steam them in a large pan with a little water until open.
  • Discard unopened mussels and set the rest aside with their juices.
  • Soften the onions, garlic, ginger, and chillies in a frying pan with olive oil.
  • Stir in the vinegar, sugar, and fish sauce, then simmer for 3 minutes.
  • Add the mussels and juices to the pan and stir until coated.
  • Squeeze in the lime juice, mix in the herbs, and serve immediately.
