Steps

  • Preheat the oven to 220°C.
  • Line six holes of a muffin tray with paper cases.
  • Beat the egg, yogurt, and vegetable oil together in a jug.
  • Stir the flour, oats, sugar, spice, and baking powder together in a bowl.
  • Mix the mango and egg mixture into the dry ingredients until just combined.
  • Divide the mixture between the six cases and press pumpkin seeds on top.
  • Bake for 20 to 25 minutes until golden-brown and a tester comes out clean.
