Steps

  • Place the sugar, vanilla, and cinnamon into a hot pan.
  • Add the berries from firmest to softest, then pour in the orange juice.
  • Cook the berries for 5 minutes, remove from heat, and chill in the fridge.
  • Warm the wine and port in a pan.
  • Soften gelatine in cold water and stir it slowly into the warm wine mixture.
  • Pour mixture into a flat container and chill until set.
  • Turn the set jelly onto a clean cloth and chop into small crystals.
  • Spoon the jelly onto plates and drizzle with the chilled berries to serve.
