Steps

  • Preheat the oven to 180°C and grease a 20cm springform cake tin.
  • Mix the flour, almonds, raisins, walnuts, mixed spice, and bicarbonate of soda in a large bowl.
  • Whisk the eggs, oil, milk, and grated carrots together in a separate bowl.
  • Stir the wet ingredients into the dry ingredients to form a thick batter.
  • Pour the batter into the tin and bake for 1 hour until a skewer comes out clean.
  • Cool the cake in the tin before removing the paper and placing on a plate.
  • Mix the soft cheese with orange zest and spread over the cooled cake.
