Steps

  • Preheat the oven to 180°C.
  • Bash the chicken breast with a meat mallet between cling film until flattened.
  • Mix the goats' cheese with chopped basil and season.
  • Stuff the chicken with the cheese mixture, roll it up, and secure with a cocktail stick.
  • Brown the chicken in an ovenproof pan with olive oil.
  • Transfer the pan to the oven and roast for 5 to 8 minutes until cooked through.
  • Fry the halved tomatoes cut-side down in a non-stick pan with oil for 2 to 3 minutes.
  • Turn the tomatoes, add balsamic vinegar, season, and cook for 2 minutes.
  • Serve the chicken on top of the tomatoes and garnish with chives.
