Steps

  • Preheat the oven to 180°C.
  • Mash blueberries, almonds, and bara brith in a bowl and stuff into the apple centres.
  • Heat butter in an ovenproof pan and add apples with half the brown sugar.
  • Transfer pan to the oven for 10 minutes once bottoms are browned, basting frequently.
  • Return pan to a low heat on the hob.
  • Add white wine and simmer until reduced before stirring in the cream.
  • Sprinkle the remaining sugar over the apples and caramelise with a blowtorch.
  • Serve apples on plates with the pan juices poured over.
