Steps

  • Halve the strawberries if they are large.
  • Combine the strawberries and lemon juice in a large pan.
  • Heat the fruit for a few minutes until it begins to soften.
  • Add the sugar and stir over a low heat until completely dissolved.
  • Boil the mixture steadily for six minutes until it reaches setting point.
  • Test the set by pushing a sample on a chilled plate to see if it crinkles.
  • Cool the jam for ten minutes before transferring to jars.
  • Spoon into sterilised jars and seal with wax paper and lids.
