Steps

  • Blend 50g strawberries and icing sugar in a mini-food processor until smooth.
  • Press the strawberry mixture through a sieve into a bowl to remove pips.
  • Whisk two egg whites in a clean bowl until stiff peaks form.
  • Gently fold the whipped 100ml cream, brandy, and half the coulis into the egg whites.
  • Pour the mixture into a glass and drizzle with remaining coulis and 50g melted chocolate.
