Steps

  • Add 30ml sesame oil, chilli, and aubergine to a hot wok.
  • Cook for three minutes, then add tofu, sesame seeds, soy sauce, and lime juice for one more minute.
  • Whisk eggs, coconut milk, sesame oil, and soy sauce together in a bowl.
  • Pour the mixture into a non-stick frying pan and cook for two minutes over a medium heat.
  • Place the stir-fried vegetables onto the omelette and fold it over.
  • Cook for one additional minute and serve.
