Steps

  • Heat a large wok over high heat until it starts to smoke and add sunflower oil.
  • Add ginger, garlic, and chillies and stir-fry for 30 seconds.
  • Add sweet potato and stir-fry for 4 minutes.
  • Add green beans and stir-fry for 5 minutes until tender and browned.
  • Transfer vegetables to a warm bowl and return the wok to the heat.
  • Add lamb to the hot wok and stir-fry for 2 minutes until just cooked.
  • Return vegetables to the wok and mix thoroughly with the lamb.
  • Add black bean sauce and stir-fry for 2 minutes.
  • Stir in sesame oil and serve in bowls.
