Steps

  • Steam lobster pieces in a boiling steamer for 5 minutes and remove.
  • Heat peanut oil in a wok until smoking.
  • Stir-fry ginger, garlic, onions, and black beans for 2 minutes.
  • Add shallots, red pepper, and chillies and stir-fry for 3 minutes.
  • Add Shaoxing wine and stir-fry for 1 minute.
  • Mix in sugar, soy sauce, oyster sauce, and chicken stock for 2 minutes.
  • Add sesame oil and black vinegar to the mixture.
  • Toss in cooked lobster and stir-fry for 2 minutes.
  • Garnish with coriander and serve on a platter.
