Steps

  • Heat the oil and butter in a non-stick frying pan.
  • Sauté the onion gently until soft but not colored.
  • Add the bacon and fry until golden-brown.
  • Add sliced potatoes and cook until tender and golden-brown.
  • Season to taste with salt and pepper.
  • Place washed spinach in a bowl.
  • Whisk 5ml of olive oil with lemon juice and toss with spinach.
  • Heat 10ml of olive oil in a small pan and crack in the egg.
  • Fry the egg for 4 to 5 minutes until set and season.
  • Plate potatoes, top with spinach, and finish with the fried egg.
