Steps

  • Heat oil in a saucepan and fry the onion, garlic, and chilli until soft.
  • Add spinach and cook until wilted.
  • Pour in 280ml of hot vegetable stock and simmer for 15 minutes.
  • Stir in double cream and season with salt and pepper.
  • Blend the soup with a hand blender until smooth.
  • Pour into a bowl and drizzle with olive oil to serve.
