Steps

  • Heat oil in a pan and fry the onion and garlic for 3 to 4 minutes.
  • Add the ginger, chilli, and Romero pepper and fry for another 2 to 3 minutes.
  • Stir in the spices, pak choi, 400ml stock, vinegar, honey, and soy sauce.
  • Simmer for 5 to 7 minutes until the liquid reduces and the pak choi is tender.
  • Stir in the cashew nuts and serve in a bowl.
