Steps

  • Heat a wok or large frying pan until very hot.
  • Add the groundnut oil and stir-fry garlic, ginger, and spring onions for 20 seconds.
  • Add the mushrooms and stir-fry for 30 seconds.
  • Add the chilli sauce, rice wine, salt, pepper, stock, and sugar.
  • Stir-fry for 5 minutes until mushrooms are cooked and have absorbed the seasonings.
  • Stir in the sesame oil just before serving.
  • Serve immediately on a warm dish.
