Steps

  • Combine sausage meat, garlic, fennel, chilli, and black pepper in a bowl.
  • Form the mixture into eight evenly sized patties.
  • Fry patties in 15ml of oil over moderate heat for four minutes per side until cooked.
  • Transfer patties to a warm plate and cover with foil.
  • Preheat the oven to 200°C.
  • Rub peppers with 15ml of oil and roast until blistered and blackened.
  • Cool, peel, seed, and cut the peppers into strips.
  • Deglaze the frying pan with 75ml of red wine.
  • Add peppers and chopped parsley to the pan and season with salt and pepper.
  • Warm the mixture through and serve with the patties garnished with parsley sprigs.
