Steps

  • Clean and dice the chicken livers.
  • Coat chicken livers in a mixture of ginger, garlic, chilli, turmeric, cumin, lemon juice, and salt.
  • Heat oil in a large pan and add the livers without over-stirring.
  • Cook for 5 minutes until browned on the outside but pink inside, then toss in coriander and mint.
  • Layer sliced onions and herbs on tortillas, top with liver, and roll to serve.
