Steps

  • Preheat the oven to 200°C.
  • Combine the sugar, spices, and water in a heavy-based pan.
  • Bring to a boil while stirring until sugar dissolves.
  • Simmer for 8-10 minutes until the mixture thickens into a syrup.
  • Strain the syrup into a jug and discard the whole spices.
  • Lay the pineapple pieces on a roasting tray and drizzle with two thirds of the syrup.
  • Roast for 8-10 minutes while basting regularly with the remaining syrup.
  • Serve two pineapple pieces per plate with a scoop of ice cream.
