Steps

  • Combine the ground pecans and icing sugar in a bowl and mix well.
  • Whisk brown sugar, egg yolks, glucose, honey, glycerine, cinnamon, and vanilla in a saucepan.
  • Cook over low heat while whisking constantly until the mixture is pale and hot.
  • Pour the hot liquid over the pecan mixture and stir into a smooth paste.
  • Wrap the paste securely and leave to cool completely before using.
