Method

Combine the ground pecans and icing sugar in a bowl and mix well.

Whisk brown sugar, egg yolks, glucose, honey, glycerine, cinnamon, and vanilla in a saucepan.

Cook over low heat while whisking constantly until the mixture is pale and hot.

Pour the hot liquid over the pecan mixture and stir into a smooth paste.

Wrap the paste securely and leave to cool completely before using.
