Steps

  • Heat one tablespoon of vegetable oil in a pan and fry onion, chilli, and garlic for 5 minutes until soft.
  • Combine the lamb, raisins, cinnamon, cloves, mint, and seasoning with the onion mixture in a bowl.
  • Divide the mixture into six portions and mould each around a metal skewer with 5cm free at the end.
  • Brush kebabs with oil and cook on a hot griddle for 8 minutes, basting with melted butter until golden-brown.
  • Fill each warmed pitta with a tablespoon of yoghurt, a handful of salad, and a kebab.
