Steps

  • Heat 30ml of oil in a frying pan and fry the onion, garlic, and chilli until softened.
  • Mix the spices and salt on a plate.
  • Brush the 2cm aubergine cubes with oil and coat them in the spice mixture.
  • Fry the aubergine in the remaining oil for 5 minutes until tender.
  • Return the onion mixture to the pan and stir in the lime juice.
  • Place griddled bread on plates and spoon the aubergine on top.
  • Garnish with a dollop of yoghurt and chopped coriander.
