Steps

  • Preheat the oven to 200°C.
  • Combine sweet potatoes, wine, stock, and butter in a saucepan and season.
  • Simmer covered for 10-12 minutes until tender then drain.
  • Dredge the lamb chop in the ground mustard, coriander, and seasoning.
  • Bake the lamb on a tray for 6-8 minutes until cooked.
  • Serve the lamb chop on top of the fondant potatoes.
