Preheat the oven to 180°C.
Rub the butter into the flour and sugar until the mixture looks like fine breadcrumbs.
Mix in the egg and vanilla essence to form a soft dough.
Roll out the dough on a floured surface and cut into rounds.
Place on greased sheets and bake for 10 to 12 minutes until golden brown.
Transfer the biscuits to a wire rack to cool completely.
Apply white fondant icing circles to the biscuits using a little water.
Layer semicircles of blue icing on top to create the snowman hats.
Adhere sprinkles to the hats using a small amount of water.
Pipe white icing for hat details and black icing for eyes and mouth.
Attach chocolate balls for the nose and hat bobble using icing dots.
