Steps

  • Heat 5 cm of vegetable oil in a wide saucepan or wok.
  • Fry the potatoes over medium heat for 10-15 minutes until just soft.
  • Drain potatoes on kitchen paper for five minutes to cool.
  • Flatten each potato gently with your palm without breaking them apart.
  • Reheat the oil and fry potatoes for 5-6 minutes until golden and crisp.
  • Drain potatoes and sprinkle with salt and spices before serving.
