Steps

  • Heat the olive oil in a wide shallow pan over a medium heat.
  • Sauté the onions and garlic for 15 minutes until soft and golden-brown.
  • Add tomatoes, 150ml water, bay leaves, salt, and sugar to the pan.
  • Bring to a boil then simmer uncovered for 45 to 60 minutes until reduced to a purée.
  • Remove the bay leaves and blend the mixture in a food processor until smooth.
  • Cool the sauce before refrigerating or freezing for later use.
