Steps

  • Preheat the oven to 200°C.
  • Slice the courgette and halve the cherry tomatoes.
  • Layer vegetables on heavy foil, season, and top with salmon and mixed herbs.
  • Add lemon zest and juice, then fold the foil to create a partial seal.
  • Pour in the vegetable stock and seal the parcel completely.
  • Place the parcel on a baking tray and bake for 20 minutes.
  • Boil the rice in 200ml of water for 10-15 minutes until absorbed.
  • Fluff the rice with a fork and serve with the fish and vegetables.
