Steps

  • Peel and halve the onion and stud each half with a clove.
  • Place the onion, milk, bay leaf, and peppercorns into a small pan.
  • Bring the mixture slowly to a boil, then remove from heat and infuse for 1 hour.
  • Cut the bread into small cubes.
  • Strain the milk into the pan, discarding the spices but reserving the onion.
  • Add bread to the warm milk and stir over low heat for 2 minutes until thickened.
  • Season with salt, pepper, and nutmeg.
  • Stir in butter and double cream over low heat until warmed through.
  • Remove the onion halves before serving.
