Steps

  • Preheat the oven to 180°C.
  • Blend shortbread ingredients in a food processor until a dough ball forms.
  • Roll dough to 0.5cm thickness on a floured surface and cut three 7cm rounds.
  • Bake rounds for 8 to 10 minutes until pale golden and cool on a rack.
  • Mix yoghurt, lime juice, and vanilla seeds in a bowl.
  • Sprinkle brown sugar over orange slices and caramelise with a blow torch.
  • Layer biscuits, yoghurt, and oranges on a plate.
  • Dust with icing sugar and garnish with mint.
