Method

Season the salmon fillet with salt and pepper.

Fry the salmon skin-side down in 25g of butter for 3 minutes until golden.

Turn the salmon over, squeeze lemon juice on top, and remove from heat.

Simmer tomatoes, sugar, and vinegar in a saucepan for 10 minutes until soft.

Sauté the watercress in olive oil for 2 minutes until wilted.

Plate the watercress, top with salmon, and spoon tomatoes alongside.
