Steps

  • Heat a heavy griddle pan over a high heat.
  • Fry the sliced chorizo until browned and juices are released.
  • Add the spring onions and sliced chillies and fry for 2 to 3 minutes.
  • Add the scallops and fry for 2 to 3 minutes on each side until cooked.
  • Drizzle with honey and stir to coat the ingredients evenly.
  • Divide the mixture into six scallop shells and serve immediately.
