Steps

  • Boil granulated sugar, water, and golden syrup until it turns a rich amber color.
  • Remove from heat and stir in butter, cream, and salt to complete the caramel.
  • Melt dark chocolate and butter in a bowl over simmering water and let cool slightly.
  • Whisk the egg yolks into the cooled chocolate mixture.
  • Whisk egg whites with caster sugar until soft peaks form.
  • Fold the egg whites into the chocolate mixture in batches until fully incorporated.
  • Layer caramel sauce and chocolate mousse in glasses, finishing with mousse.
  • Refrigerate for one hour and serve with a dollop of whipped cream.
