Steps

  • Drain soaked cod and boil in water for 25 minutes until tender.
  • Drain the fish and flake the flesh whilst removing skin and bones.
  • Mix flour with 250ml cold water in a bowl to create a thick paste.
  • Stir in the fish, peppers, onions, and chili then season with black pepper.
  • Heat 2.5cm of vegetable oil in a heavy-based pan.
  • Fry spoonfuls of batter for 3 minutes until crisp and golden brown.
  • Drain the fritters on kitchen paper to remove excess oil.
