Soaked overnight and rinsed thoroughly several times

Steps

  • Bring milk, lemon zest, and garlic to a boil in a saucepan over medium heat.
  • Remove from heat, add cod, and rest for 15 minutes until the fish is cooked.
  • Boil potatoes and celeriac in salted water for 10 minutes until tender and drain.
  • Mash the vegetables and beat in butter, olive oil, and some poaching milk until smooth.
  • Chop half the fish and beat into the mash, then flake the remaining fish.
  • Transfer to a bowl, top with flaked fish, and garnish with parsley.
