Method

Preheat the oven to 220°C.

Place the salmon in the centre of the pastry sheet.

Mix the capers, red pepper, and mustard, then pile the mixture onto the salmon.

Brush the pastry edges with beaten egg and fold it to encase the salmon completely.

Brush the top of the pastry with the remaining egg.

Bake on a tray for 15 minutes until the pastry is golden.

Serve immediately on a warm plate.
