Steps

  • Fry sage leaves in olive oil for 1-2 minutes until crisp and drain on kitchen paper.
  • Roll puff pastry on a floured surface to a 20cm x 30cm rectangle and trim edges.
  • Sprinkle fried sage, parmesan, and optional anchovies over pastry and season with pepper.
  • Roll both short sides of the pastry into the center to form a scroll shape.
  • Brush the pastry with beaten egg and chill in the refrigerator for 30 minutes.
  • Preheat oven to 200°C and line a tray with a silicone sheet.
  • Brush again with egg and cut into 10 slices using a sharp knife.
  • Bake for 10-12 minutes until puffed and golden brown, then cool slightly.
