Steps

  • Wash the rice repeatedly until the water runs clear and soak in fresh water.
  • Crush the saffron strands and soak them in the orange flower water.
  • Fry sliced shallots in butter and oil until crisp, then drain on kitchen paper.
  • Fragrance the remaining fat by frying the whole spices and nuts for several minutes.
  • Add drained rice, salt, and saffron liquid to the pan and stir constantly.
  • Pour in 1 liter of water, boil, then cover and simmer for 15 minutes.
  • Fluff rice with a fork and serve topped with the fried shallots.
