Steps

  • Preheat the oven to 200°C.
  • Melt the butter in a small ovenproof frying pan over a medium heat.
  • Add rhubarb and caster sugar to the pan and stir well.
  • Roast in the oven for 10-15 minutes until the rhubarb is cooked through.
  • Combine the Greek yoghurt and vanilla seeds in a small bowl.
  • Plate the roasted rhubarb with a dollop of vanilla yoghurt on the side.
