Steps

  • Preheat the oven to 180°C.
  • Stir asparagus spears and olive oil in a bowl to coat.
  • Heat an ovenproof griddle pan until smoking hot.
  • Add asparagus, garlic, thyme, chilli, salt, and pepper to the pan.
  • Griddle the mixture for 2 to 3 minutes.
  • Transfer the pan to the oven and roast for 8 minutes.
  • Pile asparagus and garlic onto a plate and top with fresh herbs.
  • Drizzle with balsamic vinegar and extra olive oil to serve.
