Steps

  • Preheat the oven to 220°C.
  • Rub butter over the turkey and season with salt and pepper.
  • Cover the turkey breast completely with the bacon rashers.
  • Place the bird in a roasting tray in the center of the oven.
  • Roast at high heat for 25 to 30 minutes until bacon is crisp.
  • Remove bacon and set aside, then basate the breast with pan juices.
  • Reduce oven to 180°C and cook for 12 minutes per 1kg.
  • Check for clear juices with a skewer to ensure it is cooked through.
