Preheat the oven to 220°C.
Rub butter over the turkey and season with salt and pepper.
Cover the turkey breast completely with the bacon rashers.
Place the bird in a roasting tray in the center of the oven.
Roast at high heat for 25 to 30 minutes until bacon is crisp.
Remove bacon and set aside, then basate the breast with pan juices.
Reduce oven to 180°C and cook for 12 minutes per 1kg.
Check for clear juices with a skewer to ensure it is cooked through.
Serve sliced turkey with traditional roast trimmings and gravy.
