Steps

  • Preheat the oven to 200°C.
  • Rub the mutton with oil and brown it on all sides in a hot frying pan.
  • Transfer the meat to a roasting tin and roast for 25 to 28 minutes.
  • Remove the meat from the oven and let it rest covered in a warm place for ten minutes.
  • Fry the chorizo in the reserved pan until it becomes crisp.
  • Add vinegar to the pan and boil until the liquid reduces by half.
  • Stir in the mustard, cayenne, cooked potatoes, and butter to combine.
  • Serve the carved mutton over the potato mixture and garnish with parsley.
