Steps

  • Preheat the oven to 190°C.
  • Parboil the potatoes in salted water for 8 minutes until almost cooked.
  • Drain the potatoes and shake them in a colander to roughen the edges.
  • Heat the duck fat in a roasting tin in the oven for 5 minutes.
  • Mix the potatoes, garlic, thyme, and salt into the hot fat until well coated.
  • Roast for 45 to 60 minutes until the potatoes are golden and crunchy.
