Steps

  • Preheat the oven to 220°C.
  • Heat vegetable oil in a roasting tin and sear the beef for 4 minutes until browned.
  • Rub a mixture of mustard powder, salt, and pepper over the beef.
  • Roast the beef for 30 minutes until it reaches 60°C for medium.
  • Remove the beef from the oven and rest for 15 minutes.
  • Fry sliced onions in butter and olive oil for 10 minutes until golden.
  • Combine the horseradish, vinegar, mustard, sugar, and cream in a bowl.
