Steps

  • Dissolve sugar in 2-3 tablespoons of water in a saucepan over gentle heat.
  • Simmer cherries in the syrup for 5-8 minutes until softened.
  • Stir in cherry brandy and leave to cool slightly.
  • Melt chocolate and cream together in a bowl over simmering water.
  • Whisk egg yolks into the cooled chocolate mixture until smooth.
  • Layer cherries into six ramekins, top with chocolate, and chill until set.
  • Garnish with grated dark chocolate before serving.
