Steps

  • Heat the oil in a saucepan and sweat the onion until soft.
  • Add the pepper and tomato and sauté for two minutes.
  • Add 150ml of vegetable stock and simmer for six minutes until the pepper is soft.
  • Pour the mixture into a liquidiser with the cold butter and blend until smooth.
  • Strain the soup through a sieve into a bowl and serve.
