Steps

  • Blanch, skin, and dry the almonds.
  • Pound the almonds in a mortar with one egg white.
  • Stir in the sugar and gradually add the remaining thoroughly whisked egg whites.
  • Drop small amounts of the mixture through a syringe onto cartridge paper.
  • Bake in a hot oven for 10 to 12 minutes until the size of a large button.
